December is 'Top 100' month, when several leading wine and spirits publications assemble their 'Year's Best' lists, sometimes in order of preference. Within minutes, trophy hunters start a frantic chase after 'the best of the best.' Once the din has died down, there are still plenty of trophies left for the rest of us to pursue at a more leisurely pace...after the holidays. Left on its lees for seven months with occasional stirring, the final wine is as deep and rich in flavor as its yellow hue predicts: It moves from waxy apple flavors to mango, wildflower honey and tangerine.
