Perhaps it's a little modern, atonal, lacking depth in the middle. Or perhaps not if you wait a day, when a spark of minerality appears in the midst of crunchy red fruits. Or wait two days as it fills out with spice and fennel notes. Or three, when the côt shows its richness in dark red plum flavors, the tannins framing that deep, dark well of flavor in high-toned mineral spice.
